Elegant Wild Rice Soup 2 T (30 ml) butter 1 T (15 ml) minced onion 1/4 cup (60 ml) flour 4 cups (960 ml) chicken broth or bouillon 2 cups (480 ml) cooked wild rice 1/2 teaspoon (2.5 ml) salt 1 cup (240 ml) half-and-half 2 T (30 ml) dry sherry (optional) (*) Minced parsley or chives Melt butter in saucepan and saute onion until tender.  Blend in flour, stirring constantly.  Gradually add broth and cook, stirring constantly until mixture thickens slightly. Stir in rice and salt and simmer about 5 minutes. Blend in half-and-half and sherry and heat to serving temperature. Garnish with minced parsley or chives and serve. Makes 6 servings. (*) In my personal opinion, dry sherry is one of the most flavorful ingredients you can add to a dish.  It truly adds a special touch of flavor.  Your best bet is to use regular sherry as opposed to cooking sherry.  I highly recommend using it in this recipe.
